Great Vegetarian Soup, Top this Thai soup with lime wedges, chopped parsley and unsweetened shredded coconut

Ingredients
1tbs vegetable oil
1 cup diced onion
2 tbs red curry paste
2 tbs siracha sauce
2 tsp grated fresh ginger
1 tsp grated fresh garlic
4 cups peeled and diced sweet potatoes
2 cups peedled and diced carrots
salt and pepper to taste
3 cups vegetable stock
1 cup coconut milk
Preparation
Step 1
Heat oil in a large pot over medium-high heat. Add onion and saute until soft and translucent, 3 to 4 minutes. Add curry paste, siracha sauce, ginger and garlic, saute until fragrant, 3 to 4 minutes, Stir is sweet potatoes and corrors, season with salt and pepper.
Step 2
Add vegetable stock and bring to a boil. Reduce heat to low and simmer until vegetables are fork tender, 20 to 25 minutes. Turn of heat and puree with an immersion blender until soup is smooth. Stir in coconut milk and season if required.
