About the Recipe

Pollo Saltado a classic Peruvian Stir Fry made with onion, tomatoes brandy & soy based sauce. A perfect weeknoight dinner that cooks in minutes.

Ingredients

  • 750g chicken breast cubed .

  • Small red onion cut into wedges.

  • 1 tomato cut into wedges.

  • 2 tablespoons coriander.

  • 2-3 cloves garlic.

  • 1 inch piece of ginger.

  • 1 tablespoon olive oil.

  • 1/4 cup of Brandy or Cognac.

  • 1/4 cup light soy sauce.

  • 1/4 cup balsamic vinegar.

  • 2 diced potatoes, deep fried (optional).

  • 1 cup of rice cooked according to package directions.

Preparation

Step 1


Finely chop ginger, garlic and corinader.



Step 2


Heat skillet until hot. Add oil, ginger and garlic. Cook until fragrant about 30 seconds.



Step 3


Add chicken. Saute until chicken is browned and cooked through. Add onion and tomato saute for 30 seconds. Add Brandy or Cognac and shake pan, (caution may cause flames (flambe) when cooked on gas flame). Add a dash of salt. Add soy sauce, balsamic vinegar and a splash of water.



Step 4


Serve over rice or deep fried or roasted potatoes. Sprinkle with parsley.
